THE SELECTION OF THE GRAPES IN THE VINEYARD AND IN THE WINERY

As a good winemaker friend of mine told me years ago, "the most important factor to make a nice wine is the grape quality, if it comes right from the vineyard to the winery, then the wine will be perfect, however if it is coming in bad conditions from the vineyard ,then we will have problems..." that is because if the grapes enter in the winery in a good state of maturity and optimum health, then the winemaker will do its work normally, and will produce a quality wine. But if the grapes enter broken or with botrytis into the winery, or with some types of fungus affecting the grapes, then ... the wine will suffer.

The right work starts in the field, so that it is cruzial to perform all the activities in the right moment, then, once we have done our homework and we have got a good grape in the vineyard, it should be treated with caution also during its transportation to the winery to avoid the grapes become broken and could start some oxidations processes that could affect the color and flavors of the wine. In the case of our Camino Soria Wine, as the grapes are caught in 20 kg boxes that are stacked, then the bottom can not suffer the weight of the above and grape enters in the best conditions to the winery.

So when you see a vintage where the grapes is getting into boxes, it is really a good sign. In Vino Camino Soria we take the grapes in the boxes you see in the picture, and at the entrance in the winery we put them directly into a cold chamber, so the next day the grapes enter cold to the fermentation tank, then they will take longer to start fermenting, permitting us to work on pre-fermentation activities with the grapes to extract more color and aromas.

Before entering in the fermentation tank, the grapes go through a sliding table (selection table) to remove those grapes having any kind of problem or even some sheet entering in the boxes accidentally. Thus, and once removing the solid part of the bunch (grapes clusters), the grapes enter into the tank clean, and will start the fermentation to make wine in perfect condition. Believe me, all this works are worth specially when you take a good wine and enjoy it....
